- Origin and use: Bourgogne, Loire, Saône, Atlantic, La Mediterranée
This knive was only produced around the 1850's - and was then lost for at least two generations, to be rediscovered PassionFrance in 2014.
Redesign by Robert Beillonnet a two times „MEILLEUR OUVRIER DE FRANCE“ winner: "Several challenging details let us speak about a new “definition” of this immemorial model. Since 2016 we produce it with our high qualified staff in our atelier in France. The most exclusive natural rawmaterials are appropriate. For the blades we basicly use the new Sandvik 14c28, called “razor-steel. For the handles we use the most authentic and traditional materials: white bone and buckhorn which also are water-resistent, macassa-ebony and juniper."
